since 2010 : Brewing Rebellion in a Bottle
Some revolutions start in classrooms. For To Øl, it began in the kitchen of a Copenhagen high school in 2010. Friends and classmates Tore Gynther and Tobias Emil Jensen were students at Det Frie Gymnasium, a progressive school that encouraged experimentation. Disillusioned with the uninspired industrial lagers that dominated Denmark, they decided to create the kind of beer they actually wanted to drink: bold, experimental, and bursting with flavor.
Their early motto was simple yet rebellious: brew the beers we want to drink.
The duo released their first commercial batch the same year, and by 2011, their inventive brews were already turning heads internationally. Without a brewery of their own, they embraced “gypsy brewing,” crafting recipes at facilities like De Proefbrouwerij in Belgium. This nomadic model gave them freedom from overhead and a playground for limitless creativity.

In just a few years, To Øl cemented its reputation as one of Denmark’s most daring craft breweries. Unlike traditional brewers who cling to classic styles, To Øl treated beer like a culinary art form — combining unexpected ingredients, pushing boundaries of alcohol content, and reimagining what beer could be.
Their visual identity matched the flavor philosophy:
